For a quickly prepared lunch or dinner I pair this salmon with a roasted vegetable like Brussels Sprouts or as the protein in a veggie packed salad. All you need are five ingredients.

Ingredients

  • 1 Salmon Filet (cut in 3 pieces, about 3 oz. each)
  • 1 tbls Olive Oil
  • 1/2 Lemon
  • Parsley
  • Salt + Pepper

I like to get a bigger piece of salmon and cut it into three servings so I can eat the leftovers for lunch later in the week. It actually heats up very well in the microwave for only a minute.

Directions:

  1. Preheat oven to 375 degrees
  2. Drizzle olive oil on a baking tray and lay salmon filets skin side down
  3. Season with salt, pepper and parsley
  4. Cook for 15-20 minutes
  5. For a little bit more well done salmon, turn the broiler on and broil for about 5 minutes
  6. Finish with a squeeze of lemon and serve with your favorite side dish or on top of a salad
