Easy Spinach Tomato Feta Quiche

Ingredients
  

  • 1 Pre-made Refrigerated Pie Crust
  • 6 Eggs
  • 1.5 Handfuls Fresh Spinach, Chopped
  • 1 Tomato, Sliced
  • 1 Cup Feta Crumbled Cheese
  • 1 Cup Heavy Cream
  • Salt
  • Pepper

Instructions
 

  • Preheat oven to 350 F degrees
  • Let pie crust sit unrefrigerated for 20 mins
  • While the crust sits out, whisk the eggs in a bowl. Add spinach, feta, cream, salt and pepper and mix evenly
  • Roll out pie crust into greased pie pan, and crimp the edges with your fingers or a fork
  • Pour mixture into pie pan
  • Top with sliced tomatoes and a little bit more salt
  • Bake for 45 minutes, or until center is cooked through
