Easy Spinach Tomato Feta Quiche

- 1 Pre-made Refrigerated Pie Crust
- 6 Eggs
- 1.5 Handfuls Fresh Spinach, Chopped
- 1 Tomato, Sliced
- 1 Cup Feta Crumbled Cheese
- 1 Cup Heavy Cream
- Salt
- Pepper
Preheat oven to 350 F degrees
Let pie crust sit unrefrigerated for 20 mins
While the crust sits out, whisk the eggs in a bowl. Add spinach, feta, cream, salt and pepper and mix evenly
Roll out pie crust into greased pie pan, and crimp the edges with your fingers or a fork
Pour mixture into pie pan
Top with sliced tomatoes and a little bit more salt
Bake for 45 minutes, or until center is cooked through
