Good afternoon! Continuing on my 21 days of healthy eating habits journey, here’s a recap of today’s meals.
Last night’s dinner was really yummy! Seasoned chicken, skewered and grilled. The recipe called for a homemade tzatziki sauce, but with a hectic week, that’s just one more thing I didn’t feel like creating dishes for or making after a long day of work, soccer practice and dance class. So I got a store bought version from Aldi, and it was really good!

I loved the cucumber salad, but next time I’d use less onion and more cucumber.
This morning’s smoothie was one of my absolute favorite Fab Four Smoothies. It’s the Cookies & Cream smoothie and it literally tastes just like cookies and cream.

It has chocolate protein powder, ground flax seeds, spinach, frozen blueberries, almond butter and almond milk. It’s so tasty!
For lunch, I threw together another salad with items I had on hand.

I am loving the kale and spinach combo now. So yummy and I think the kale is more filling. The dressing technique I’m using is also really easy and it tastes so good. I whisk up 2 tbs. EVOO and 1 tbs. vinegar, salt and pepper in the bottom of the bowl before adding all the veggies, then mix it all up so it’s a more well balanced flavor.
Very yummy!
Tonight it’s TGIF and I’ve had a very busy week, so I’m looking forward to a glass of wine or two and a good meal.
